Background
Thyme essential oil (EO) shows a very strong antimicrobial effect on a large number of bacteria and fungi. As other EO, thyme oil easily evaporates and decomposes by direct exposure to heat, oxygen or light. Hence, it has to be encapsulated in order to be protected from degradation. Encapsulation into chitosan particles is promising as..
